In fact, it has nothing to do with Jerusalem, nor with the artichoke, as it belongs to the Asteraceae family. Jerusalem artichoke (Helianthus tuberosus) is a root vegetable.

It is served with or without the skin and is cooked like a potato: grilled, boiled or steamed, while it also makes delicious soups. It can also be fried with a little margarine, along with the skin, which is thin and nutritious, as long as it has been thoroughly washed beforehand. In addition, it can be used as a garnish in a salad.

The Jerusalem artichoke, in 2002, won the title of best vegetable soup at the Nice Festival for the legacy of French cuisine.

Jerusalem artichoke contains prebiotic fiber and in particular is very rich in insulin, a carbohydrate that:

  • It is associated with good gut health
  • It has been shown to reduce the risk of constipation, but diarrhea episodes.
  • Increases the intestinal absorption of calcium and magnesium by the body.
  • It can lower cholesterol and the risk of developing dyslipidemia, as they are involved in lipid metabolism.
  • It increases stool volume, improves bowel motility and can reduce the risk of some cancers.

Inulin is a carbohydrate that breaks down into fructose. Fructose is not used to treat diabetes, but it is considered better than sugar for most diabetics because it must be converted to glucose before it is absorbed by the cells.
