The hare grass (Tragopogon porrifolius) is a one-year-old, biennial or perennial ornamental plant that belongs to the family of composites. It is also called “hare’s beard”, “hare’s mustache”, “hare”, “worm” and “goat’s beard”.

Its shoots and leaves are eaten boiled along with other greens as a salad or used in mixtures for vegetable pies. Its taste is slightly bitter. The root is eaten plain. It is also used as a diuretic and laxative. The infusion is given for arthritis, rheumatism and skin diseases.
