Rheum rhabarbarum, commonly known as rhubarb or rhubarb, is a species of the Polygonaceae family.

Because the rhubarb stem grows directly from the rhizome and produces the leaf at the end, in botany it is categorized as a vegetable and used in cooking as a fruit.
