Artichoke (Cynara cardunculus, Kynara the cardoniski or Kynara the cactus) is a perennial vegetable of the Asteraceae family.

From the plant is used in cooking the flower, which has a spherical shape, a little long and fleshy. It is cooked after being cleaned of petals and fluff, while in Crete it is also eaten raw with lemon, very tasty and “special” snacks for tsikoudia.
